North East India comprises of eight states and the most striking factor of this region is its serene beauty and simple way of life. The food culture of North East India is different from the rest and it is largely the same in these eight states. Let us explore the mysterious food habits of North East India. Basically the inhabitants of North East India are non-vegetarians. Even though they cook vegetables, they give a non veg taste to it by adding meat or fish. North East Indian cuisine is highly influenced by Chinese, Burmese and Mongolian cuisine.

Starting with Assamese cuisine, rice is their staple food and they consume rice in different forms and flavors. Pitha - a rice based sweet is very popular in this region. Authentic Assamese cuisine is not so spicy and less oily, yet delicious to savor. They use mustard oil as the medium of cooking. Chicken is forbidden for orthodox families, but it is very difficult to find a person who doesn't eat fish or eggs.

Arunachali cuisine, Mizoram cuisine and Tripura cuisine generally includes non vegetarian meals. The people of Arunachal Pradesh generally love Chinese food. The delicacies of Mizoram are highly nutritional since they are preparing it in such a way that the nutritional value is preserved. Tea is a very popular drink in Mizoram. The traditional dish of Tripura is Moi Buruk. Fish is the integral part of Tripura cuisine and they savor Bengali dishes also.

The traditional dining in Manipur is a large affair, where you have to sit in front of banana leaf plates and all the dishes are served on the leaf. Some of the famous Manipuri dishes are Kabok and Iromba. Kabok is a combination of rice and vegetables where as Iromba comprises of fish, vegetables and bamboo shoots.

Meghalayan cuisine is also rich in rice and meat. They have several dishes where pork is the major ingredient and they love Jadoh, a spicy combination of rice and pork. They also have great interest in Chinese food. Kyat - a locally made brew using rice is their all time favorite.

The remarkable specialties of Sikkimese cuisine are the Tibetan Thupka, Momos, Gundruk, Sael Roti etc. Alcohols and fermented drinks are very popular in Sikkim and one such drink is Tchang. Tchang is a beer which is made from millet.

The food habits of Nagaland are extremely strange when compared to other regions. They are basically non vegetarians and eat the meat of all animals like dogs, spiders, crabs, beef and even elephants. In general, they don't throw any part of animal. Even the skin and intestine of animals are considered as delicious dishes. But they won't eat flesh of certain animals; for fear that the qualities of such animals are transferred to them. They are fond of drinks irrespective of age and sex. Some of their popular drinks are Zutho, Ruhi and Dzutse, where all are rice based.

All the eight states together present a diverse food experience where people from other parts can definitely try.

Palm Wine

Palm Wine is also known as Palm Toddy or simply Toddy is an alcoholic beverage created from the sap of various species of palm trees like Coconut-palm and Palmyra. This drink is common in various parts of Asia and Africa but named differently. The sap is extracted and collected by a tapper. Typically the sap is collected from the cut flower of the palm tree. A container is fastened to the flower stump to collect the sap. The white liquid that initially collects tends to be very sweet and non-alcoholic before it is fermented. An alternate method is the felling of the entire tree. Where it is practiced, a fire is sometimes lit at the cut end to facilitate the collection of sap.

In parts of India, the unfermented sap is called "Neera" ("Padaneer" in Tamil Nadu),is a non-alcoholic drink and is refrigerated, stored and distributed by semi-government agencies. A little lime is added to the sap to prevent it from fermentation. Neera is considered as a nutritional drink as it carries many nutrients including potash. Palm Toddy also forms the base for a drink popular in Goa, known as Fenny. Palm Sap starts fermenting immediately after collection of sap, due to natural yeasts present in the air. Within 2hour the natural fermentation lead to a natural wine of up to 4% alcohol, mildly intoxicating and sweet. The drink may be allowed to ferment longer, up to a day to make it stronger, more sour and acidic in taste. Longer fermentation produces vinegar instead of stronger wine. In India and South-Asia the Coconut-palm and Palmyra are preferred to make palm wine. In some parts of India, palm wine is evaporated to produce the unrefined sugar called "Jaggery". Toddy tapping is a common occupation in Kerala, where it is generally performed by the men of Ezhava Caste, and women of that caste run toddy shops where toddy and food are sold.

Palm wine can be distilled to create a stronger drink, which goes by different names in different regions. Palm wine plays an important role in many ceremonies in parts of Nigeria. Guests at weddings, Birth celebrations, and Funeral wakes are served generous quantities. Palm wine is often infused with medicinal herbs to remedy a wide variety of physical complaints. Palm wine is enjoyed by men and women, although women usually drink it in less public venues.

Yummmeee....INDIAN STREET FOOD

"God's own country"-Kerala gives us another gift to relax and soothe our nerves. That is "Tender coconut wine" made out of "tender coconut water". The invention of tender coconut wine carries a very interesting, but real story behind it. Life is full of struggling events. But the winner is the one who finds his way of victory from the extreme situations as it is still believed that, "If there is a will, there is away." Conversion of crises into opportunity can be done only by some courageous people who are followed by a farmer in real, in Kerala. Sebastian P Augustine, a 66-year coconut farmer who is worried, when a disease in his coconut plantation occurred. Instead of crying for relief, he found a way to make wine out of tender coconut water. Once the news spread he was crowned with fame. Many scientists and big companies approached him to get the "know-how" of the process. But he decided to start the commercial production from Kasargod on Kerala-Karnataka border and applied for the government license. Later on it was approved by Indian Patent Office. He was also awarded with Kera Kesari Award in the year 1998. The wine is a highly healthy, hygienic and nutritional beverage.

The tale of this inimitable farmer gives a lesson to all those people who feel hebdomad in difficult situation. God also help those people who continue to keep trying.
