In seventeenth century, Spanish explorers found that the local Hispaniola Arawakan Indians dried their meat on a wooden frame and they called it as 'barbacoa' which means 'sacred fire pit' in their Taino language. Another theory states that the word 'barbecue' is derived from the French word 'barbe a queue' which means cooking a pig from 'beard to tail' indicating that the entire pig was roasted.
